DAOU's Adelaida District estate sits high in the Santa Lucia Mountains above Paso Robles, and this Cabernet shows it. The winemaker notes ripe cherry, black plum, Zante currants, and blackberry jam with coffee, pencil shavings, desert sage, and baking spice. Full-bodied with polished tannins, vanilla, black olive, and a savory thread of leather.
